So today, you’re supposed to cook from a zine. YAY! This recipe is from a zine I got at the SF Zine Fest in 2011. I had thought I lost the zine and I was heartbroken, but it turned up in a friend’s house and it was like Christmas times my birthday plus finding $5 in your pants. I haven’t tried all the recipes in this zine, but I’ve had great success with the ones that I’ve used. Like this one below, for example. So simple, yet so damn good. I’m not even vegan, and I will tell you these are top-notch pancakes. I like to put bananas and/or peanut butter on them. They are good the next day, too.
Cornmeal Blueberry Pancakes
1 cup soymilk
1/2 cup water
1 cup white whole wheat flour
1/2 cup cornmeal
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup fresh or thawed frozen blueberries
Combine everything but the blueberries and the oil. Then fold the blueberries in. Does the batter seem too thick? If so, add a little water or soymilk to thin it. Cook in a skillet using a small amount of oil. Flip them when the edges are getting dry. Serve with Earth Balance and pure maple syrup or however you like your pancakes.
